The rice used is "Tsukiakari," a type of rice produced in Ishikawa Prefecture.We use red vinegar to reduce the acidity and bring out the flavor and richness.The fish used is fresh seafood purchased from Omicho Market.This sushi is characterized by its thickness and is very satisfying to eat.Please try our proud "Staircase Sushi".
